Position Overview:
The Assistant Chef - Cheese and Charcuterie is responsible for managing and maintaining the cheese and charcuterie fridge in a professional kitchen. This role involves ensuring the quality and freshness of all cheese and charcuterie products, preparing and presenting sandwiches and salads, controlling inventory,
and meeting quality control standards.
Key Responsibilities:
1. Inventory Management and Quality Control:
• Maintain an accurate inventory of all cheese and charcuterie products.
• Monitor stock levels and place orders to replenish supplies as needed.
• Ensure proper rotation of products to minimize waste and maintain freshness.
• Inspect all cheese and charcuterie products upon delivery for quality, freshness, and compliance with food safety standards.
• Monitor and maintain optimal storage conditions, including temperature and humidity levels.
• Conduct regular checks to ensure that all products are properly stored and labeled.
3. Food Preparation:
• Implement the “Mise en place”, install the setup required before serving, prepare the ingredients (clean, chop, mince) and organize the ingredients and the workstation.
• Prepare sandwiches and salads according to customer orders and specifications, while following recipes and portion control guidelines to ensure consistency in taste and presentation.
• Prepare cheese and charcuterie platters and ensure proper portioning and presentation.
• Collaborate with the head chef to develop new and innovative cheese and charcuterie offerings
4. Sanitation and Safety:
• Adhere to all food safety and sanitation guidelines, including proper handling and storage of cheese and charcuterie products.
• Ensure that all equipment, utensils, surfaces and fridges used for the cheese and charcuterie handling are regularly cleaned and sanitized.
• Monitor and maintain cleanliness and organization of the cheese and charcuterie fridge area.
5. Team Collaboration:
• Supervise the junior colleague and coordinate with him to ensure smooth day-to day operations and effective rush hours service.
• Communicate any issues or concerns regarding cheese and charcuterie products to the operations manager
Qualifications:
• Previous experience (3-5 years) in a professional kitchen, preferably in cheese and charcuterie preparation.
• Average to good knowledge about cheese and cold cuts. Willingness to learn and ability to design creative cheese and cold cuts platters.
• Good experience with food safety and sanitation regulations.
• Strong organizational skills and ability to work in a fast-paced environment and handle multiple tasks simultaneously.
• Strong communication and teamwork skills.
